Yummy Pasta Salad!

My brother said he threw this together one day for his wife with stuff that was in the refrigerator. They’ve made it quite a few times since then and this weekend I made it for our 4th of July/Brother’s birthday celebration. It’s so good!

Salami & Pasta Salad
A delicious pasta salad perfect for cookouts!

  1. Cooked Pasta (I used Plain Rotini but Tri-Color pasta would be yummy too!)
  2. 3-4 Roma Tomatoes
  3. Half an Onion (whatever color you feel like! I used white.)
  4. 1-2 green peppers
  5. Fresh Garlic (I only cut up 2 cloves and added it in, but if you want to do more, go for it!)
  6. 1/3 lb. hard salami
  7. 1 6(?) oz. bag of shredded Parmesan
  8. 1/2 bottle of Garlic Expressions classic vinaigrette dressing
  9. Salt and Pepper
  1. Cook pasta, drain and let cool a bit.
  2. While cooking the pasta, slice and dice tomatoes, onion and green peppers.
  3. When done with the vegetables, take the sliced hard salami and cut it up into little bite sized pieces.
  4. Take the pasta and the rest of the ingredients and mix them together in a big bowl.
  5. Add Salt and Pepper to taste.

Peanut Butter Chocolate Dessert Bars


If you happen to go to Sexton High School with me, visit this site you might remember the delicious peanut butter chocolate dessert bars you could find in the cafeteria. They were AMAZING.
The mother of my best friend in high school worked for the school cafeteria and a few years ago she shared the recipe with me. Of course she gave me the original recipe which called for 3 gallons of peanut butter, drug 6 lbs of butter and 21 pounds of powdered sugar. LMAO. But..she ended up also working out the recipe for a normal sized batch for me. YUM..

Now before I give you the recipe..I just wanted to tell you about my friend’s mom. Her name is Rita and in 2014 she was diagnosed with Pancreatic Cancer. I know for a fact that Rita has done everything she can to kick cancer’s ass. I haven’t seen her lately and I’ve been too afraid to ask Andrea how she’s been doing, but it seems that maybe the end is near. :'(

The family set up a gofundme a few months ago to help with the costs of Rita’s medical treatments, and now they will need help with the funeral costs when the time comes. If you can spare a few dollars to help this wonderful family out through this hard time, that would be great. Peanut Butter Chocolate Dessert Bars

No bake Peanut Butter and Chocolate dessert bars.

  1. 1/2 cup butter (or margarine, whatever you have)
  2. 1/2 cup packed brown sugar (light or dark, again whatever you have)
  3. 1 teaspoon vanilla extract
  4. 2 cups peanut butter
  5. 2- 1/2 cups confectioners sugar
  6. 2 cups semisweet chocolate chips
  1. Place all ingredients (except the chocolate chips) in a large microwave safe bowl.
  2. Microwave until butter and peanut butter are melted, one to two minutes (time will vary by microwave).
  3. Remove from microwave and use a large spoon to stir all of the ingredients together until they form a ball of dough that leaves the side of the bowl.
  4. Pat into a 9x13 pan. (I used a cookie sheet with wax paper laid down on it and sprayed with a bit of Pam. I also put another sheet of wax paper over it and rolled it out with a rolling pin to spread it evenly.)
  5. Pour chocolate chips into another microwave safe bowl and microwave at 30 second intervals, stirring after each, until completely melted. (It took me about 3 intervals to completely melt the chocolate chips.)
  6. Spoon over top of peanut butter mixture and spread evenly.
  7. Allow to cool completely at room temperature until chocolate hardens again or place in the refrigerator for faster hardening.
  8. Cut into squares and serve to some awfully happy people!

Great balls of Pizza!

I used this recipe that I found on Pinterest the other night and made PIZZA BALLS. They were amazing! I did alter the recipe a bit, prescription because who puts Co-Jack cheese on a pizza? NOT ME. Mozzarella is where it’s at. 🙂 I also used Pillsbury Grands biscuits as well. Next time I make these I’m going to try it with actual pizza dough and see how they turn out. But the Pillsbury biscuits were good and EASY!

  1. 1 can of Pillsbury Grands Biscuits
  2. 40 pepperoni slices (4-5 per biscuit)
  3. Block of Cheese (I used Mozzarella)
  4. 1 Beaten Egg
  5. Parmesan Cheese
  6. Garlic Powder
  7. 1 Jar of Pizza Sauce (I used the kind that comes in a squeeze bottle!)

  2. Cut cheese into chunks (The smaller, the better)
  3. Flatten each biscuit out
  4. Spread pizza sauce onto flattened biscuit
  5. Put down slices of pepperoni
  6. Put Chunks of Cheese on top of Pepperoni
  7. Gather edges of biscuit and secure on top of the roll
  8. LIne rolls in greased 9x13 pan
  9. Brush with beaten egg
  10. Sprinkle with Parmesan Cheese, Italian Seasononing and Garlic Powder
  11. Bake at 425 degrees F. for 18-20 minutes. (Though to be honest it took less time than that, so keep an eye on your pizza balls while they're cooking!)
  12. Serve with warm pizza sauce for dipping

Bacon Bread Recipe

Anyways, this is a recipe I need to try ASAP. Though, I might make this with Cheddar Cheese rather than Mozzarella. If I use mozzarella cheese I will have to put pepperoni on this as well..and then it’ll be pizza bread and not Bacon Bread. Maybe, I’ll make one of each. ;D

Bacon Bread

Bacon, Cheese and Bread. 3 of my most favorite things! 😉

  1. 12 bacon strips, diced
  2. 1 loaf (1 pound) frozen bread dough, thawed
  3. 2 tablespoons olive oil, divided
  4. 1 cup (4 ounces) shredded part-skim mozzarella cheese
  5. 1 envelope (1 ounce) ranch salad dressing mix
  1. Directions
  2. In a large skillet, cook bacon over medium heat for 5 minutes or until partially cooked;
  3. drain on paper towels.
  4. Roll out dough to 1/2-in. thickness;
  5. brush with 1 tablespoon of oil.
  6. Cut into 1-in. pieces;
  7. place in a large bowl.
  8. Add the bacon, cheese, dressing mix and remaining oil;
  9. toss to coat.
  10. Arrange pieces in a 9-in. x 5-in. oval on a greased baking sheet, layering as needed...
  11. Cover and let rise in a warm place for 30 minutes or until doubled.
  12. Bake at 350° for 15 minutes. Cover with foil; bake 5-10 minutes longer or until golden brown.
